  1. 200 gram paneer (cottage cheese)
  2. 1 medium size capsicum
  3. 1 medium size onion
  4. For marination:
  5. 1/2 cup hung curd
  6. 1 tsp ginger garlic paste
  7. 1/2 tsp red chilli powder
  8. 1/2 tsp garam masala
  9. 1/4 tsp turmeric powder
  10. 1/4 tsp nutmeg powder
  11. 1/4 tsp curshed saffron
  12. 1 tbsp gram flour
  13. 1 tsp lemon juice
  14. to taste Salt
  15. As needed Oil for pan frying/ grilling
  16. For gravy:
  17. 3-4 medium sized tomatoes
  18. 2 medium sized onions
  19. 8-10 cashew nut halves
  20. 1 tsp ginger garlic paste
  21. 1/4 cup thick curd (whipped)
  22. 1/4 cup cream
  23. 1+ 1 tbsp oil + butter/ghee
  24. 1 tbsp coriander powder
  25. 1/4 tsp red chilli powder
  26. 1/2 tsp turmeric powder
  27. 1/2 tsp garam masala
  28. 1/2 tsp dry fenugreek leaves (kasuri methi)
  29. as per taste Salt
  30. As required Coriander for garnish

Steps to make to make Paneer tikka masala

  1. Cut paneer in cubes. Chop capsicum in dices. Peel and chop onions in petals.
  2. Transfer hung curd in a big bowl, whip it smooth. Add all spices, gram flour, lemon juice and salt. Mix well. Add paneer cubes, capsicum and onions in it and mix properly to coat every thing well with marinade. Cover and let it marinate for minimum 1 hour in refrigerator.
  3. While it is marinating, prepare for gravy. Blanch tomatoes, onions and cashew nuts in boiling water. Once they are blanched and cool down. Peel the tomatoes and grind it in puree. Grind and prepare paste of onion and cashew nuts.
  4. Heat oil+ghee together and add onion cashew paste and saute it properly. Then add ginger garlic paste and saute it till raw aroma goes away.
  5. Further add tomato puree and saute until the fat comes on the top. Now add all the dry spices powders and mix well.
  6. Now remove the pan from gas stove and add whipped curd and mix well. Add salt and water (approximately 1 cup) and stir and put again on the gas stove.
  7. Let the gravy simmer for 5-7 minutes or till gravy becomes thick.
    Add cream and kasuri methi and turn off the heat after 1-2 minutes.
  8. Now thread the marinated paneer, capsicum and onions in wooden skewers. Heat the grill pan and brush it with oil and arrange the threaded skewers. Top up with some drops of oil.
  9. Gently rotate the skewers time to time and cook paneer and veggies till they become crisp and brown.
  10. Once it is pan fried, remove from the skewers and add it into prepared gravy.
  11. Garnish with coriander and serve hot with any Indian flat bread along with onions, chillies, curd, buttermilk or your choice of condiments.
